The Royal Oscietra comes from the Oscietra sturgeon (Acipenser Gueldensteadtii) which was originally sourced from Russia.
When grading the caviar, the master blender takes into account the size, firmness, colour and taste of the eggs.
Historically, it was the larger eggs that were reserved for royal families – hence the name. The roe's diameter can stretch as much as 3mm with a grey colour palette with golden edges.
Royal Oscietra has a mellow, nutty flavour that literally melts in the mouth and some people say it is as good as any Beluga on the market.
